Yellow tea is fermented or oxidised longer than green tea, which eliminates its “grassy” note, so typical of green teas. Also the drying process is slow and takes longer. Tea leaves are usually layered on special paper, where they develop their natural yellow colour. The prepared beverage is of golden yellow colour and has mild, fresh, and floral aroma. Some place it in the category of teas between white and green, while others believe its long oxidation makes it more similar to the taste of oolong teas. Its healing effects are like those of green tea, as it is high in antioxidants that protect our body from destructive free radicals. Let’s mention in particular the enzyme epigallocatehin (EGCG) that supposedly inhibits the development of cardiovascular disease, diabetes and some forms of cancer. Our yellow tea comes from Simao region in Yunnan.
