Yin Zhen Silver Needle white tea

White teas are not classified into categories like black and green teas are, they are rather characterized by their region of origin. Yin Zhen is placed among first ten in the ranking of most famous Chinese teas, and comes from the northernmost part of the Province of Fujian. Fuding Da Bai (Big White) and Fuding Da Hao (Big Tip) are selected varietals of China tea bush that give the tea its characteristic pale green colour and leaves that are covered with distinctive fine silver hair. The best tea of this sort is harvested between March 15 and April 10, if the weather is not rainy. Yin Zhen tea is low in caffeine and has no chlorophyll, but it is extremely rich in polyphenols. Its liquor is of pale golden colour and fresh, mellow taste.
