The finest black tea in the world comes from the region Darjeeling in East Himalaya where the British started to grow tea in the second half of the 19th Century. Darjeeling today is a huge tea garden consisting of about 100 tea estates that gave name to individual varieties of tea. The differences among them are substantial, partly due to the position of individual estate, partly because of the time when the tea is plucked. A reliable indicator of tea quality is its price – the higher the price, the better the quality.  The first harvest – first flush – starts by the end of February and lasts until April. Superior first flush teas are characterised by high number of tender tea tips that give most of the flavour. The infusion is clear and light, very refreshing and has a pleasant muscat aroma. It is best suitable for afternoon drinking. Second flush in Darjeeling takes place by the end of spring and in early summer. This is the peak of the growth season, when leaves are juicy and strong and they develop a stronger aroma when processed. The prepared tea has accentuated muscat aroma and is also good for the morning cup.   Due to the high content of polyphenols, which are more like the polyphenols contained in green and not black tea, First flush Darjeeling teas can turn bitter during preparation. We can thus adjust our preparation and use a smaller quantity of tea leaves or leave them in water for a shorter time. We can also try with the preparation typical for green tea.  DARJEELING F.F.
